Inspector's notes

Shredded lettuce and sliced tomato found in table cooler with internal temperatures of 55*F (temperatures verified with PIC's and inspectors calibrated probe thermometers). PIC stated the food items were placed in the cooler about 30 minutes ago and moved them to another cooler for cooling and continued cold holding. PIC will monitor the items and ensure they are cooled to 41*F prior to 5:00 PM and discard them if they do not reach 41*F prior to 5:00 PM. The table cooler will not used for cold holding of TCS food items until it is repaired/replaced/adjusted and able to maintain an ambient temeprature of 41*F or below. Please ensure cold held TCS food items are maintained at 41*F or below. Corrective Action: Corrected at time of inspection.

Observed the condensation line in the walk-in freezer with a leak, leaving ice debris on top of frozen food in boxes (apple pies and flout tortillas). Informed PIC that the boxes of food need to be stored out from under the leak so that the ice cannot contaminate the food. PIC instructed employees to move the food at time of tinspection. Corrective Action: Corrected at time of inspection.
