Observed chicken in the open small hot hold case at 104F. Been in the case for 3 hours. Talked to manager about hot holding policy, Manager removed all TCS foods in case, and embargoed foods. Ensure that all hot holding areas that have TCS foods, are kept at 135F and above. Corrective Action: Corrected at time of inspection.
