PIC stated the cabinet is only used to thaw raw chicken and the air temperature is maintained at 38*F for a 24 hour cycle for the cooler is cleaned and sanitized. Observed all chicken in the cooler holding at 41*F or below at the time the cycle had completed. Establishment does not have documentation onsite to show how the cooler is being utilized. PIC stated the display on the cooler always shows a temperature at or below 41*F. Utilizing the cooler at 41*F or below to thaw raw animal proteins will not require a variance.

Observed air temp holding at 38*F and all foods at 41*F or below. Advised PIC that a variance is required if thawing above 41*F. Thawing above 41*F may expose some areas of food above 41*F and should be properly reviewed for safety. Advised PIC the thawing cabinet may be used at 41*F or below as a dedicated unit for properly thawing frozen foods in accordance with FDA guidelines.

This establishment received a(n) A Grade and had 0 Priority, 0 Priority Foundation violations on this inspection.Of note: Observed an "Electrolux Thawing Cabinet" in use for thawing raw animal proteins (including raw shrimp, chicken and beef) from frozen with an ambient air temperature at 39*F when measure with a min/max thermometer. PIC stated the cabinet had been thawing raw animal proteins overnight and had 9 hours remaining at the time of inspection. All raw animal proteins were observed at 41*F or below internally and on the surface. Discussed that thawing in this capacity is not operating in approved method for thawing. Discussed this equipment may be used as a refrigerator only in the "hold" mode. Discussed if the establishment would like to continue to use the equipment as programmed they will need to submit documentation and obtain an approved variance. PIC stated the thawing cabinet is operated by holding air temp at 68’F for 4 hours, then holding at 45’F for 3 hours, then holding at 38’F for 5 hours. Add raw animal proteins had been in the cooler less than 1 hour and were observed at 41*F or below. Discussed that thawing in this capacity is not operating in approved method for thawing. Discussed this equipment may be used as a refrigerator only in the "hold" mode.
