Inspector's notes

Observed 44*F-51*F in the veggies (sliced tomatoes, shredded lettuce) reach-in cooler. Employee stated they had turned the cooler up because they had seen frost build-up. Min/max started going lower soon after employee turned temperature back down on the unit. Discussed keeping the lid down and the temperature at the correct settings to maintain proper internal temperatures without overworking the reach-in. Employees will check the unit regularly to ensure temperatures stay at 41*F or lower. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed 4 packages of rodenticide in the storage closet. Discussed with employee that these types of chemicals are not allowed onsite at food establishments, and that only a certified pest control specialist can apply pest control measures. The employee removed the rodenticide from the establishment at time of inspection. All pest control for the establishment must be performed by a certified pest control specialist and chemicals for pest control must not be stored onsite. PIC removed pest control chemicals from premises at time of inspection. Corrective Action: Corrected at time of inspection.

The sanitizer at the three-compartment sink was measuring 0ppm using both establishment's test strips and inspector's test strips. Employee bought bleach at time of inspection to use at the three-compartment sink until quat concentrations can be fixed. Quat sanitizer needs to be 150-400PPM (dependent on mfg). Food-contact surfaces must be properly sanitized after washing and rinsing. Corrective Action: Corrected at time of inspection.
