Inspector's notes

In the walk-in cooler, observed chili/62F which had been prepared the day before. It was in a plastic container about 12 inches deep. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff and a verification breakdown which resulted in the violation. The cooling log and cooling procedures were reviewed. The improperly cooled chili was discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

After a discussion with the operator, it was determined that the root cause of the violation was incomplete repair as the warewashing machine had underwent repair the day prior.

Observed chemical warewashing machine output dishes with no concentration of chlorine determined by both operator and inspector test strips. Dishes must be sanitized with a sanitizer concentration within the range given on the manufacturer's label. Operator immediately started using 3-compartment sink quat sanitizer at the approved ppm until the warewashing machine could be repaired. Corrective Action: Corrected at time of inspection.
