Corrective Action: Corrected at time of inspection. Beans cooked and set to cool an hour before in deep containers in the walk-in at 102*F to 120*F internally. Manager had beans transferred to shallow (2") pans and moved to freezer to allow to rapidly cool.

Predefined Comment: TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Predefined Comment: All TCS foods being cooled in deep containers were transferred to shallow containers to allow for rapid cooling.

This establishment is not participating in the award program at this time and had 0 Priority, 0 Priority Foundation violations on this inspection. Of note: -Observed garlic and oil mixture holding at room temp the PIC stated was prepared at noon. PIC moved garlic oil to the cooler at the time of inspection. Discussed garlic and oil mixtures are TCS and should be held at 41*F or below. -Observed walk in cooler completing defrost cycle at the time of inspection. Advised PIC to have a repairperson adjust defrost time to be opposite of the warmest part of day and when most cooling is completed i.e. 9am and 9pm. A copy of the report was emailed to the manager.No County legal action will result from this inspection.On July 1st, 2023, the Environmental Services Department started emailing permit card(s) and permit invoice(s) to permittees. PIC stated the mac was removed from the hour approximately 1 hour prior. Ensure cooling from 135*F to 70*F is done in no more than two hours, and to 41*F or below in no more than four more hours. Cool most efficiently in shallow, uncovered pans in walk-ins, reach-ins or freezers. PIC removed the plastic wrap at the time of inspection to help the mac and cheese cool more rapidly.
