The knife and interior of the knife block (used to cut sandwiches) at the make line area had excessive old food debris/soil residue present. PIC was unsure of when the knife and knife block was last cleaned, but stated that it had not been cleaned since the store opened (more than 4 hours ago) today. PIC removed the items to be properly cleaned. Utensils, equipment, food contact surfaces that are used with TIME/TEMPERATURE CONTROL FOR SAFETY FOOD shall be cleaned throughout the day at least every 4 hours. Corrective Action: Corrected at time of inspection. PRIORITY VIOLATION-4-703.11 - Priority: Hot Water and Chemical-Methods; Sanitizing Food Contact Surfaces.
