Inspector's notes

Observed a large bucket of salsa with a date mark of 8/4. According to the person in charge, the date mark of 8/4 was an old date mark sticker that they had not removed, and the salsa had been prepared 2 days prior. Also observed some large trays of cooked pork al pastor without date marking. According to the person in charge, the pans of pork had been cooked the day prior. Discussed with person in charge to date mark foods after 24 hours or if necessary for better tracking of dates, to date mark the food the same day it is cooked/produced. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a container of cooked pork carnitas sitting on the counter that had just been cooked and placed onto the counter to begin cooling according to the person in charge. It was observed that the pan of cooked pork was stacked higher than 4 inches deep. The internal temperature of the pork as measured using a probe thermometer was around 140°F. Discussed with person in charge to monitor cooling food temperatures and to place cooling food into an ice bath when the temperature is at 135°F. The cooling food in question was transferred to a shallower pan and placed into an ice bath to begin cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

Discussed with person in charge that all food should be stored a minimum of 6 inches off the ground at all times to protect the food from contamination from the premises. The person in charge properly stored the buckets of tomatoes at time of inspection. Food must be stored at least 6 inches off the ground at all times to prevent contamination from the premises. Observed container of beef soup that measured at an internal temperature of 47-48°F. Discussed with PIC when the soup was made and it was made last night. Discussed with PIC that Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. All TCS foods improperly cooled were discarded by PIC at time of inspection. PRIORITY VIOLATION-3-501.14 - Priority: Cooling.
