Inspector's notes

Observed ready-to-eat salads and sushi rolls at a refrigerated bar. Ambient temperatures as measured using a min-max thermometer in the unit were holding steady at 55°F. The internal temperature of sushi rolls as measured using a probe thermometer was at 51°F. Per the person in charge, the food had been in the unit for over 2 hours. The person in charge had the TCS foods removed from the unit and put in a work ticket to have the unit serviced. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
