Core-4-501.11, C: Good Repair and Proper Adjustment-Equipment In test runs, hi-temperature mechanical dishwasher appears not to be reaching proper sanitizing temperature per inspector's thermometer. Assure hi-temperature mechanical dishwasher is achieving proper sanitizing temperature of food equipment per machine's specifications. ----------- PIC instructed food employees to manually sanitize food equipment using three compartment sink.
