Observed no hot water under pressure at the 3-compartment sink at time of inspection. Hot water of: 100°F is required at all handwash sinks; 110°F at all other sinks; 120°F at mechanical warewashing units sanitizing with chemicals; and 140°F at mechanical warewashing units sanitizing with high temperature. Provide adequate hot water at all sink fixtures prior to re-inspection on 7/31.

Unit had an ambient temperature of 58*F but the butter was the only TCS food item in the unit at the time of inspection. Person in charge was not sure how long the butter was in the unit but voluntarily disposed of it. Discussed how all time/temperature control for safety (TCS) foods that are cold held must keep an internal temperature of 41*F or below to prevent bacterial growth.
