Person in charge (PIC) stated they were placed in the steam well approximately 30 minutes prior to inspection. PIC placed gyros in the oven to reheat to 165*F. Observed baked peaches and cooked carrots hot holding in the hot cabinet behind tray line with internal temperatures of 107-115F, probe thermometer, verified by PIC. The peaches and carrots were hot holding for less than two hours and both were placed into the oven/steamer to be reheated to at least 165F. Maintaining cooked TCS foods at 135F or more during hot holding prevents significant regrowth of heat-injured microorganisms and prevents recontamination with bacteria that are newly introduced. Corrective Action: Corrected at time of inspection.

Observed in-use sanitizer buckets storing a wiping cloth with a lactic acid (sink and surface sanitizer) concentration of 0 ppm (tested multiple times). PIC will contact the chemical company to service the chemical dispenser. The sanitizer can be manually diluted in the 3-compartment sink to refill sanitizer buckets at the correct concentration of 704-1875 ppm. Too high of a concentration can be toxic and too low may be ineffective. Corrective Action: Corrected at time of inspection.
