Observed multiple items (e.g., pico de gallo, garlic in oil, chicken) sitting on the countertop, with internal temperatures ranging from 61-68*F. PIC stated they have been sitting out of temperature control for 2 hours and will be discarded at the end of the service (total of 3 hours). Advised PIC to establish time as a public health control procedures. Informed PIC that written time as a control procedures should be provided prior to re-inspection within 10 days. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Corrective Action: Correct prior to re-inspection within 10 days (05/15/2026).
