Inspector's notes

Observed raw shell eggs being stored above tomatoes (sliced and whole) in the walk-in cooler behind the 3-compartment sink. Person in charge (PIC) stated that the eggs are personal items. Informed PIC that all raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. Furthermore, informed PIC that all personal items should be stored away and below from food served to customers. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed green salsa, red salsa, hot salsa, sour cream, and diced tomatoes with internal temperature ranging from 50-53*F in the walk-in cooler behind the 3-compartment sink. Air temperature in the cooler shows 52*F. Person in charge stated the items were prepped before lunch about 3 hours ago. Informed the person in charge (PIC) that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit (the walk-in cooler in the back) to rapidly cool to 41°F at time of inspection. Advised PIC to use the walk-in cooler behind the 3-compartment sink for produce storage and non-TCS foods only until the unit is fixed. Corrective Action: Corrected at time of inspection.
