Observed raw chicken stored behind raw ground beef in the drawer cooler on the line. Observed raw filet mignon stored above mozzarella and raw ground beef above raw beef roast. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Observed 25ppm chlorine sanitizer from the main dishwasher in the kitchen after priming and running multiple times. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels (50-100ppm). Food-contact surfaces were properly sanitized at time of inspection in the 3 comp sink. Inspector's notes

Observed a large, plastic container of cooling Bolognese sauce in the outside walk in cooler with internal temperatures ranging from 44-49*F when measured with a probe thermometer. Observed a large fat cap on the top of the sauce and approximately 10 inches of cooling food in the container. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.

Observed TCS foods in the server expo cooler with internal temperatures ranging from 50-52*F, including opened milk, housemade garlic aioli, ranch and whipping cream. Observed the ambient air temp inside the cooler at 50*F when measured with a min/max thermometer. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Establishment will be utilizing their 3 compartment sink until the dish machine is repaired. Instructed PIC re-wash any dishes that were ran through the dish machine on the day of the inspection.
