Inspector's notes

Observed 15+ houseflies throughout the establishment. Establishment has an opened roller door and air curtain that was observed turned on, but with the air appearing to be partially obstructed by the roller door. Observed a fly trap in the back kitchen that was not turned on at the time of inspection. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection on 5/22/2026. Advised PIC to relocated the air curtain fan to the exterior of the roller door or to allow the rollers to be pushed up further into the interior of the establishment. Corrective Action: Correct prior to re-inspection.

Establishment will be utilizing their 3 compartment sink until the dish machine can be repaired. Instructed PIC re-wash any dishes that were ran through the dish machine on the day of the inspection. Chlorine must have a concentration between 50-100 ppm for sanitizing food contact surfaces. Corrective Action: Corrected at time of inspection.

Observed raw shelled eggs stored above RTE deli turkey, cut leafy greens, and other RTE food items located in the long reach in cooler. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code.
