Observed sliced tomatoes in walk-in cooler at 44-52 °F. Tomatoes had been sliced, covered, and placed in walk-in to cool 6.5 hours prior as per person in charge. Time/temperature control for safety (TCS) foods prepared from cold or ambient room temperature ingredients must be cooled from 70°F to 41°F within 4 hours.
