Inspector's notes
Observed shredded cheese, cooked chicken, and cooked pork sausage with internal temperatures of 50-56 degrees Fahrenheit in prep-style refrigerator for pizza station during inspection. The unit was powered off at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per person in charge (PIC), items were placed in unit 30 minutes prior to the inspection. Items were moved to the walk-in refrigerator to cool rapidly - inspector verified temperatures. Inspector verified that, after plugging the refrigerator into a different outlet, the unit was able to hold cold properly at 41F. Corrective Action: Corrected at time of inspection.

Of note: Discussed with PIC cleaning fried chicken prep fridge and ice machine more frequently to preclude accumulation of food debris and organic matter. // Observed no hand sink in ice machine and soda room in main dry storage back room on east side of cinema. Discussed with PIC that hands are expected to be washed prior to scooping ice from ice machine. If employees wash hands and don gloves in kitchen, they cannot touch doors, phones, clothing, hair, etc. or they would need to wash their hands again (and any other time employee does something that could cause contamination. Recommend obtaining hand sink for ice machine room. A minor remodel may be required to be submitted with the County if hand sink is installed.
