Observed cumin lime dressing containing yogurt dated 8/22, house made tomato sauce dated 8/18, house made mayo dated 8/17, and poached shrimp dated 8/22. PIC confirmed these dates were correct. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.

Chlorine sanitizer solution at in-use mechanical dishwasher was measured at 0ppm during inspection. Chlorine sanitizer solutions for food contact surfaces shall be maintained at 50-100ppm. Employees and PIC ran the machine several times and reconnected sanitizer container with the solution still testing at 0ppm. PIC contacted sanitation company during inspection and the technician assisted the staff in completing the repairs. Concentration of 50ppm was attained during inspection. Corrective Action: Corrected at time of inspection.

All items were uncovered and unstacked to allow for proper cooling. Discussed the importance of proper cooling methods to allow for proper cooling with the PIC. All items should be cooled in uncovered, shallow pans in the walk-in, by using an ice bath, or another effective means.
