Observed female who cutting raw chicken at the prep table, washed hands then dried her hands on the apron. Addressed code violation on hand washing practice with kitchen in-charge personnel. Staff was corrected by In-Charge person at time of inspection. Staff rewashed hands and dried hands in paper towels upon correction. Correct By: Corrected At Time Of Inspection
PRIORITY VIOLATION-3-501.14, P: Cooling. Observed cooked rice being cooled on counter at 108 degree internally. Per person in charge, rice was just cooked and let it cool down first before placing into walk in cooler. Advised to have rice use the proper cooling procedure according to code and not trying to guess the temperature and time during cooling process. PiC stated that rice was cooked about 10am this morning, cooked rice transferred into walk in cooler for continuing cooling upon inspection. Correct By: Corrected At Time Of Inspection
