Caulking on upper edge of hand wash station in men's restroom needs repair. Cleanout below men's hand wash station needs cover or filling around edges. Women's hand wash station drain-line needs to be covered or filled where it enters the wall. Cover around pipe in mop sink area has separate from the wall and needs to be repositioned to cover spacing around pipe entering wall.

-- Julienne cut ham, mixed meats (pork and beef sausage), chicken sausage, and beef in reach-in refrigerator near pizza oven had internal temperatures ranging from 56°F-58°F. The person in charge stated the items have been in the unit since the previous day. All TCS foods improperly cold held were discarded by PIC at time of inspection. Ensure TCS items are maintained at 41°F or below when cold holding. Corrective Action: Corrected at time of inspection.

-- The ambient temperature of refrigerator near pizza oven measured at 58.1°F using min/max thermometer (see violation above). All TCS items were removed from the refrigerator at the time of inspection. Recommended using the unit for storing non-TCS items (cookies, pizza dough) until it can be repaired. The establishment has sufficient refrigeration space to continue operating safely while unit awaits repairs. Corrective Action: Corrected at time of inspection.
