Both main kitchen's tabletop prep coolers observed at 58.6'F and 80.2'F. PIC could not determine if units were turned off during the break prior to inspection. Units are observed completely empty without TCS food storage at time of inspection. PIC agreed to ensure units are working at full capacity to maintain cold holding temperatures of 41'F and below, prior to reopening. All other coldholding storage holding TCS food items observed at full capacity.

In a cold holding unit, observed cows milk, butter, cream cheese and eggs having internal temperatures of 48-52*F. Person in charge states these foods were placed from the walk in cooler 2 hours prior to inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed the cold holding unit in the trailer having an ambient temperature of 62*F. No TCS foods were being stored in this unit but is vital to the normal operation of this establishment. Also observe the cold holding unit in the other trailer having an ambient temperature of 51*F. All TCS foods in this unit were moved to a working cold holding unit to cool down since they had been there for approximately 2 hours. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection. Reinspection will be conducted on or before 8/2/2024.
