Discussed with Person in Charge (PIC) handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC provided soap at the handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed in the top sandwich prep table across from the grill TCS items with internal temperatures of 46*F to 49*F measured with probing thermometer. Top refrigeration unit had an internal ambient temperature of 55*F measured with a min/max thermometer. PIC called maintenance to fix unit. The items were lettuce wraps, shredded lettuce, green leaf lettuce and tomatoes. Per PIC the items were placed in the unit 1 hour prior to inspection. Discussed with PIC except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Discussed to not use top of unit until it can maintain and hold foods at 41*F or less. Corrective Action: Corrected at time of inspection.

Also discussed to clean and replace caulking to create a smooth and cleanable surface and to avoid caulking particles from contaminating foods.
