Observed open container of sliced cooked turkey in cooler with a date mark from 10 days prior. Person in charge stated that the date mark was made on the date of reception and the turkey was frozen until the day prior to inspection. TCS food prepared and packaged by a Food Processing Plant that does not meet the criteria to be exempted must be clearly marked at the time the original container is opened and is held for >24 hours to indicate date/day the food shall be consumed on premises, sold, or discarded. All RTE/TCS foods were properly date marked with the date of thawing & opening at the time of inspection. Corrective Action: Corrected at time of inspection.
