Recommend maintenance for small reach in unit; freezer unit for fries. Reminder: A Certified Food Protection Manager and certificate are needed during open hours of operation. Request: RPZ's are required to be tested yearly. Please have test completed and result of test on hand prior to next routine inspection. Of note: roof work currently being conducted. 40 roof tiles missing/replaced.

Observed hot holding cheese sauce inside hot holding unit at 112*F-122*F. Verified 4 times with person in charge with inspector and establishment thermometers. Calibrated thermometers with Person In Charge (PIC). Per employee procedures were not followed for reheating cheese sauce prior to inspection start. Employee did not reheat/microwave cheese sauce second time and stir. Reviewed with employees and PIC. PIC will discard improperly hot holding cheese sauce. Per procedures cheese sauce is maintained hot for up to 5 days once placed into hot holding dispensing unit. Corrective Action: Corrected at time of inspection.
