Provided time as a control guidance documents.>>>>>Observed establishment cooking and cooling cooked beef, chorizo, chicken, rice, tamales, and enchiladas. Observed a 3-comp sink, and a flat top grill and stove with a ventilated hood. Establishment is recommended to apply for a Class 4 E&D Permit. Will follow up with person in charge on proper permitting with advanced preparation of menu items.
