Inspector's notes
Observed opened tomato bloody mary mix at 47'F in reach-in cooler at time of inspection. Ambient temperature of unit in question reading 47.4'F. PIC stated items had been in unit for longer than 4 hours. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Establishment has adequate coldholding capacities. PIC agreed to not use unit in question for TCS food item storage until it has been fixed. Corrective Action: Corrected at time of inspection.

Observed tomato bloody mary mix with no datemarking in reach-in unit at the bar. PIC stated item was opened 3 days prior. Reviewed datemarking requirements with PIC to ensure tomato base items are being datemarked for 7 days. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

Observed multiple fruit flies present throughout food areas at time of inspection. Observed open glue traps for fruit flies hanging on ceiling above ice machine in warewashing area. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection. Remove open traps prior to re-inspection. Re-inspection scheduled on 10/31/24.
