Walked with contractor, owner, and chef.Establishment is approved to stock and train, but not to serve the public at this time.Correct the following items for permit approval:1) Install an RPZ backflow preventer (ASSE 1013, such as a Watts 009) on all water lines to combi oven.2) Shorten drain line from water softener so that it has a 1” air gap at mop sink. Also ensure drain line terminates over mop sink fully – use an elbow if necessary.3) Install metal cove base along wall at hood area.4) Install cove base in dry storage and mop sink rooms.5) For other effective means of barrier protection, install fly bait stations in the outdoor garbage area, along the patio planter area, near windows that can remain open, near front doors.No County legal action will result from this inspection.Report emailed.
