At in use 3-compartment sink, at dishware surfaces, sink and surface cleaner sanitizer solution with a concentration of 0ppm. After several attempts for proper reading, sanitizer solution was hand diluted to the proper concentration of sink and surface sanitizer solution. District manager was contacted that chemical dispenser was not working properly. Chemical company was called at time of inspection. Discussed more frequent monitoring of sanitizer solution, especially at start of day. Corrective Action: Corrected at time of inspection.

On hot serving line, canned green beans with an internal temperature of 98*F-105*F. Per employee, green beans were placed in hot holding well, with heat unit turned half way, about 45 minutes and were ready for service. Heat unit was increased to high and green beans heated up to 135*F within 15 minutes. Discussed ensuring units are turned on high when initially placing foods in hot holding wells to rapidly heat to proper temperature. Maintain TCS (time/ temperature control for food safety) foods at a hot holding temperature of 135*F or higher at all times. Corrective Action: Corrected at time of inspection.

At the three compartment warewashing sink, observed sanitizer dispenser labeled Ecolab Sink & Surface Cleaner Sanitizer, but it was supplied with Oasis 146 multi-quat sanitizer. Instructions for using the Sink & Surface Cleaner Sanitizer were also posted. The PIC changed out the sanitizer at the time of inspection. Corrective Action: Corrected at time of inspection.
