Observed American and white cheese and lettuce cold holding at internal temperature of 55 deg F at the top portion of a reach in unit by the grill area. PIC informed the Cheese had been in unit since the night prior and discarded and placed the lettuce in freezer purchased earlier in day in freezer for rapid cooling.
