Ensure all restrooms are completely enclosed and provided with tight-fitting and self-closing doors, Continuously running air-curtains at the entryways to the restrooms are also acceptable.3. Provide solid surface material such as stainless steel for the countertops beneath the self-service soda fountains and for the countertops surrounding the front service area hand sinks. 4. Do not use the mop sink faucet to supply water to chemical dispensers. Y- Valves and downstream shut-off devices are not permitted to be connected to mop sink faucets.5. A separate stainless-steel NSF approved food preparation sink is required for each of the two kithcnes for the proper rinsing/thawing of food items. Drain lines must be indirectly plumbed with approved minimum 1-inch air gaps.2. Provide an additional water line, with an angle-stop or ball valve, at each of the mop sink/ utility areas to supply chemical dispensers. Do not use the mop sink faucet. Y- Valves and downstream shut-off devices are not permitted on mop sink faucets or chemical dispensers.3. Ensure all restrooms are completely enclosed and provided with tight-fitting and self-closing doors.4. A minimum 75-gallon capacity water heater is required for each of the two kitchens. Provide the two 110- gallon capacity water heaters as indicated on your submitted plans to meet the minimum hot water demands of the fixtures in the facility.5. Provide certified, RPZ backflow prevention devices for each water line that feeds the FBD 562 and FBD 773 frozen beverage dispensers.6. Provide a certified, RPZ backflow prevention device for each water line feeding a soda fountain carbonator. All piping and fittings on the downstream side of this device(s) must be plastic or stainless steel, no copper or brass.7. Provide a metal cove base at the floor/wall junctures on the inside and exposed outside portions of the the walk-in units Do not use ceramic cove base tiles in these areas.8. Provide a cove base finish at all floor/wall junctures in the kitchens, bar, mop sink and restroom areas.9. Exposed, rough, unfinished wood is not an approved finish. Paint/seal wood including the underside of countertops and bars. Paint or seal any wood exposed from cabinet cutouts or conduit penetrations.
