Observed bar dishwasher with chlorine sanitizer measuring at 0 PPM. Staff confirmed dishes had been washed today—staff to test the sanitizer strength on the first cycle of dishes. Management was alerted and plans to use the 3-compartment sink to sanitize dishes until the unit can be serviced. Reviewed sanitizer concentration requirements. Corrective Action: Corrected at time of inspection.

Observed several damaged tiles behind the bar, causing exposed raw, porous concrete, which was accumulating dark organic matter and holding water. Proper repair is required. Do not use unapproved methods. Establishment is to cover the raw concrete with an approved surface or sealant to make the area non-absorbent, smooth, and easily cleanable. Discussed premises requirements with the manager. Physical facility must be maintained in good repair at all times. Repair physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

The establishment has 4 handwashing sinks, two in the bar proper and two by the 3-compartment sink. All handwashing sinks lack any handwashing signage. Discussed with the PIC that all handwashing sinks needed this posted by the sinks. Explained that handwashing is critical to keep FBI contained and the signage needs to be up by the next inspection. Correct prior to next routine inspection.

The backflow device on the mop sink is very loose and has been temporarily secured with several wraps of Scotch tape. Discussed with PIC to determine if it still functions and the reasons why.
