-- Observed grilled onions sitting on top of hot holding warming unit in a plastic container with internal temperatures ranging from 95°F-111°F using probing thermometer. The person in charge stated the onions were grilled earlier in the morning by a night shift cook. All TCS foods improperly hot held were discarded by PIC at time of inspection. Recommended cooking grilled onions to order for immediate service. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

-- Nacho cheese in warming dispenser observed with an internal temperature of 73°F using probing thermometer. The person in charge (PIC) stated the cheese was placed in the dispenser over 2 hours prior to the inspection (early in the AM). All TCS foods improperly hot held were discarded by PIC at time of inspection. The warming dispenser was turned on (the dispenser was initially off/unplugged) and new nacho cheese product was placed in the unit. Verified the unit was able to maintain temperatures at a minimum of 135°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
