Observed chopped lettuce/54°F, spinach/ 54°F, corn salsa/ 48°F, potato salad/ 47°F, tzatziki sauce/ 57°F and hard-boiled eggs/ 50°F in the upper portion of the open top salad station cooler. Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. According to the person in charge the lettuce and spinach had been in the cooler since this morning around 10AM. The lettuce and spinach were moved to the walk-in cooler at time of inspection. All other TCS foods had been in the salad station cooler since last night and were discarded at time of inspection. Minimum temperature of the salad cooler measured at 46.9°F with min/max thermometer. Discontinue storage of TCS foods in the salad station cooler until repairs are complete and unit maintains 41°F or less. Corrective Action: Corrected at time of inspection.

No internal thermometer observed in the salad cooler used to hold assorted TCS foods such as chopped lettuce and potato salad. A permanent temperature measuring device is required in any unit storing time/temperature control for safety food because of the potential growth of pathogenic microorganisms should the temperature of the unit exceed Code requirements. In order to facilitate routine monitoring of the unit, the device must be clearly visible. Obtain internal thermometer for the salad station cooler prior to the next routine inspection. Observed a container of potato salad/60*F mixed with ambient temperature ingredients cooling in the open top cooler at time of inspection. The potato salad had been cooling for less than 30 minutes. TCS food prepared from ingredients at ambient temperature shall be cooled within 4 hours to 41°F or less. Ensure foods are not cooled in open air coolers or prep coolers as these units are designed to keep TCS foods cold and not cool product. Construction Inspection. Walked with staff and contractor. Project nearly complete. Establishment is approved to stock and train, but not to serve the public at this time. Inspection conducted with RS#1317. Correct the following items for permit approval:1) Have dish machine serviced so that it reads 50-100ppm chlorine at final rinse; machine tested at less than 50ppm during inspection.2) Provide a true unobstructed internal air gap for chemical dispenser at 3-compartment sink (right side). Flex gaps are not approved.3) Remove dead leg of copper supply line at soda bag-in-box.4) Separate drain lines from dish machine and 3-compartment sink; drain lines from different equipment cannot be manifolded together. Ensure drain line is hard piped with a 1” air gap at floor sink.5) Hard pipe drain lines from condensate neutralizers from tankless water heaters. Ensure drain lines are hard piped with a 1” air gap at floor sink.6) Provide light bulbs to all light fixtures at hoods.7) Seal gaps under center island cap (cookline kitchen area).8) Seal/fill gaps under beverage counter – use foam, FRP, etc.9) Seal wall under beverage counter with paint or similar.10) Seal/fill all penetrations in back area near soda bag-in-box.11) Make restroom door fully self-closing.12) Provide a policy for draining steam wells (must be drained at end of night or shift, where it will be dumped, size of bucket to be used, etc.).
