All raw foods must be stored based around their cook temperatures, with the higher minimum temperatures being on the bottom. Chef moved foods to proper storage.

Inspector's notes

In the prep cooler across the line from the egg cooler, observed pico, cooked mushrooms, cottage cheese, cooked sausages, cooked peppers, and cut arugula all between 45*F and 49*F. All foods had been in the unit for approximately 2 hours. Foods were moved to the walk-in cooler to rapidly cool. Unit was holding at 34*F on inspector's min/max thermometer. After foods are below 41*F again, they are allowed to be returned to the same unit. In the drawer cooler unit observed French toast batter, chicken and steak egg wash, raw chicken, raw steak, ham, cooked corned beef, cooked potatoes, and cooked sausage patties all between 46*F and 53*F. Foods had been in the unit for approximately 2 hours. All foods were moved to the walk-in cooler to rapidly cool. The drawer unit was holding at 45*F on the inspector's min/max thermometer. TCS foods must not be placed into this unit until it is holding at or below 41*F. At the passthrough/expo area, observed a carton of half and half at 52*F in the cooler. Half and half was being taken out of the cooler very frequently, and other foods in the unit were holding at proper temperatures. Discussed possibly placing the open cartons on time as control for safety. If not on time as control, it must remain at or below 41*F at all times.

No backflow device was on the water line to the machine. Please provide the department with a Brand, Model Number, and Specification Sheet. Please install an ASSE 1013 Backflow Preventer on the water line prior to the machine. The vent of the backflow preventer must be plumbed to drain to a floor drain. Please have device tested and results available.

This Advisory visit was conducted to review a Dog Friendly Patio Application that the Department received for this location.The Dog Friendly Patio is not approved at this time and the following items must be completed for final approval. Contact the Department once all of the requirements are met.- No dogs are allowed to congregate with-in 7 feet of any opening into the facility. This includes the North and South doors that lead into the facility.- Signs or table tents must be used designating the areas of the patio that are at least 7 feet from the door to the patio where dogs are allowed to congregate. Suggest relegating the dogs to the Northern side of the patio by placing a sign not allowing dogs with-in 7 feet of the Southern entrance to the establishment.- Add grout to the cracks in the patio and seal the patio with at least two layers of sealant to promote cleanability.- Any cleaning supplies used for the cleaning the patio and dog waste must be stored outside of the facility. Per operator they can be stored in the breezeway that is behind the facility.- Please review the Dog Friendly Patio application for the other operational requirements.No County legal action will result from this visit.Report was emailed.
