Observed stirring spoons stored in water at 72F. PIC removed the spoons from the water and properly stored the spoons at time. Discussed proper storage methods for utensils between uses at the time of inspection. Utensils in-use must be held in water above 135'F, in running water, or dry and washed/rinsed/sanitized every 4 hours. Corrective Action: Corrected at time of inspection.

PIC stated she used 1 tablet for half a sink full. Inspector had PIC remake sanitizer with 1 tablet per 2 gallons. Final concentration was between 200 and 300 ppm. Also discussed leaving items in the sanitizer for 1 minute, so the contact time is enough to kill microbes. Correct By: Corrected At Time Of Inspection

Per PIC, items had been in and out of the fridge. Fridge thermometer was showing 48 degrees F. Inspector had PIC move items to a different reach in.
