Observed Chicharrones with meat on them sitting out at room temperature. They measured with an internal temperature of 72 degrees F. The intention with the product is to hot hold them. They had been out at room temperature for a couple of hours. The PIC made room in warmer for the remaining product that was left sitting out. Discussed hot holding and alternative options such as time as control.

The chicharrónes drying out by fan measured with an internal temperature of 66 degrees and the chicharrónes that were being held on the counter in a box measured with an internal temperature of 80 degrees F. Both items were recommended for discard due to uncertainty of times and lack of cold/hot holding space. Discussed alternative cooling and drying procedures.
