In the in-use mechanical dishwasher in the bar, observed final rinse maximum water temperature of 140F after two runs. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. Wares were sent to kitchen dishwasher for proper washing/sanitizing, and staff will continue to do so until the machine is repaired and cleaning/sanitizing properly. Corrective Action: Corrected at time of inspection.

In prep cooler, observed sliced tomatoes and pico de gallo with date marks of 4/9. Also observed an undated, open jug of milk that was opened more than 24 hours before. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). The PIC indicated that the datemarks were incorrect, and corrected the datemarks. PIC immediately voluntarily discarded the milk. All RTE/TCS foods were properly date marked at the time of inspection. Corrective Action: Corrected at time of inspection.

All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Final Construction. Walked with owner Jim. E&D Class 4, 10+ seating. Permit is approved. Dog Friendly Patio also approved on this inspection. Correct the following items prior to your routine inspection:1) Finish re-plumbing drain line to dump sink in beverage area.2) Seal all gaps and penetrations in mop sink room, including at gaps at concrete water heater platform.3) Ensure all items to be washed fit at least 51% in the basins of the 3-compartment sink; remove any large pots or pans that cannot fit in the 3-compartment sink.4) Ensure fly-proof trash can is maintained on Dog Friendly Patio areas(s).This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2.
