The floor sink beneath the new condiment counter is not currently accessible for cleaning. Provide an opening above this floor sink that is at least 12 in. x 12 in. and centered over the floor sink so that it is accessible for cleaning. Ensure that wood in the cutout areas in the bottom of the cabinet are finished to be smooth non-absorbent and easily cleanable. Also provide a strainer and grate for this floor sink.2. The RPZ backflow prevention device for the yogurt machine water cooling system must be tested and certified.3. Repair the door sweeps at the bottom of the walk-in unit doors and reseal the cove base to the floor/wall junctures on the outside of the units where necessary.No county legal action will result from this inspection.
