Observed in the sandwich prep table at the end of the kitchen to be at an internal ambient temperature of 50*F on the top and 59*F in the bottom of the unit. Per person in charge (PIC) the unit is emptied every night and is filled before open at which is less than 4 hours prior to inspection. Several TCS items were found to be at temperatures of 44*F to 51*F and were relocated to adequate refrigeration to rapidly cool. Discussed with PIC to not utilize sandwich prep table until it is able to maintain TCS foods at temperatures of 41*F or less. All TCS items relocated were raw wings, raw chicken, cooked shrimp, gyoza (pork pot stickers), garlic oil, mixed cooked veggies, cooked chicken, breaded chicken, and raw tofu. Discussed with PIC except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

The person in charge must be a CFPM and must be on site at all operational hours. Food handlers must have food handlers’ certifications. Maintain all food handlers and CFPMs’ certifications on site for inspection purpose.Permit is approved.Please address the following items prior to the re-inspection on 9/14/23:1. Provide 1” air gap above the flood rim of the mop sink for the drainpipe from the ice machine. Seal the hole penetration of the old drainpipe. This is not acceptable since it created a cross connection.2. Provide sanitary toilet seats (horseshoe shape) for the toilets.3. Enclose the wall under the front service counter. Exposed studs, posts, electrical lines, J-box, etc. is not acceptable. 4. Noted there are a lot of extension cords under the front counter.
