Cooked steak and cooked chicken without date marks in the walk-in and reach-in coolers. Spoke with PIC and both meats were cooked on Saturday (three days prior). PIC labeled TCS items with their respective dates. TCS food needs to be clearly marked to indicate the date or day the food shall be consumed on premises, sold, or discarded when held at a temperature of 41°F or less for a maximum of 7 days. Core-5-205.15 (B), C: System Maintained in Good Repair; Maintained- West faucet at the three compartment is leaking at the valve, probably valve stem of the hot water valve. Please repair. Please cut back the drain lines on the ice machine and prep sink to slightly above the floor sink rim. In the mop closet, repair the mop sink faucet that is leaking continuously. When repairing make sure that the backflow valve on top is also working. The re-circulation pump mounted above the water heater is not working. Please check and repair. Core-5-202.11 (B), C: Cleanable Fixtures - Please re-silicone the three compartment sink at the top wall juncture. When done fixing the mop sink issue, re-silicone the mop sink at the FRP juncture.
