Due to the violations noted on this inspection report, County legal action may result from this inspection.At the time of inspection, observed ice machine installed as well as a handwashing sink in the second building/ food preparation area. Establishment removed sink and ice machine from upstairs and reinstalled downstairs in the second building. Upon inspection, a remodel has taken place which may require an application and plans to be submitted, and/or additional permits. Please submit an application, supporting documentation, and fees within 5 business days or legal action may result pursuant to MCEHC Chapter 1, Regulation 4(e). Applications with supporting documentation can be submitted via the customer portal "Permit Center" online at maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home.

Observed between use utensils stored in a crockpot with standing water at 73*F at the time of inspection. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. PIC discovered the crockpot was turned off and turned crockpot on at the time of inspection. All in-use utensils were properly stored at time of inspection. In second kitchen in bottom portion of pizza prep cooler, pizza sauce 51*F - 59*F prepared and cooling in covered containers deeper than 4". Per PIC, pizza sauce was prepared 3 hours prior with no cook/ heat step. PIC directed employee to add ice wands and uncover to continue the cooling process. Recommended stirring pizza sauce to ensure proper cooling time frame. TCS foods are to be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. After almost empty bottle of sanitizer was exchanged for full bottle and machine was primed, chlorine sanitizer with a concentration of 50-100ppm. Discussed more frequent monitoring of sanitizer solution throughout the day, especially at start of day and after periods of inactivity. Corrective Action: Corrected at time of inspection.

At pizza station, tomato based sauce with an internal temperature 90*F-110*F. Per manager, sauce was made today and ready for use. Instructed manager to re-heat sauce back to 165*F or higher. Recommended using pizza oven or cheesecake oven to ensure sauce is at proper temperature before placing in hot holding unit and ready for service.
