Observed live baby German cockroach directly beneath the prep sink adjacent to the 3-comp sink at time of inspection. Also observed dead German cockroach inside the cabinet beneath the food prep counter. Discussed pest control procedures with PIC. PIC has already scheduled a servicing and will maintain invoices on-site for review. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection. Per maintenance the element rusted out on the hot water heater. Repair the element or replace the hot water heater for a commercial grade 80-gallon hot water heater. Hot water temperature only reached 85'F. Provide 100-110'F of hot water to all hand sinks and 110'F or greater to all other sink fixtures. 2) Remove the RO system below the prep sink.
