Inspector's notes

Observed cooked beef cooling in three containers deep than 3 inch and with lids on in glass door refrigerator in the kitchen. Internal temperature was measured between 66*F to 72*F. Manager stated the cooked beef were prepared and cooled about 1 hour prior to inspection. Educated cooling methods to the manager. Manager changed the containers to shallow metal containers and moved to walk-in cooler for fast cooling.

Observed carne asada in the hot holding well with an internal temperature of 95*F when measured with a probe thermometer. According to manager, carne had been placed in hot holding about an hour ago. All hot TCS food must maintain internal temperatures of 135*F and above. Carne was removed and placed on grill to be reheated back to 165*F at time of inspection. Corrective Action: Corrected at time of inspection.
