Observed cooked rice, rice noodles, dairy, eggs, cooked and raw meats, bean sprouts, and shredded cabbage in the walk-in with internal temperatures ranging from 49*F-53*F when measured with a probe thermometer. According to owner, items had been in walk-in since the previous day or longer. All TCS (time and temperature controlled for safety) must maintain internal temperatures of 41*F and shelled eggs must maintain internal temperatures of 45*F and below. All TCS food was embargoed and removed at time of inspection (see embargo form). Corrective Action: Corrected at time of inspection.

According to PIC, beef was just prepared and placed in table less than an hour prior. Once foods are prepped, they must be moved to the walk-in to cool completely to 41*F and below before being placed in reach-in units. Discussed that reach-in units are not designed to cool foods down properly, only hold the current temperature of the food. Beef was removed and placed in walk-in at time of inspection.
