All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. Person in charge removed chicken and placed back on grill and replaced cutting board and knife. Food contact surfaces must be properly cleaned and sanitized in between different types of raw animal foods; change from raw foods to RTE foods; between used with raw fruits and vegetables and TCS food; before using or storing food temperature measuring device; any time contamination may have occurred.
