Observed large covered pan of cooked quinoa on speed rack in walk-in cooler which measured 82 degrees F. Employee said it had been prepared nearly 6 hours prior, item was discarded at time. Please ensure all time/temperature controlled for safety food items are cooled from 135 to 70 degrees F in no more than 2 hours, and all the way down to 41 degrees F in no more than 6 hours total. Corrective Action: Corrected at time of inspection.

Observed pooled eggs, cooked chicken, raw chicken, turkey slices, and cut tomato in the walk-in cooler with temperatures from 47-51*F. Ambient air temperature taken with a min/max thermometer is 49*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed an ambient air temperature with a min/max thermometer of 49*F in the walk-in cooler located in the back of house. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Currently the establishment has sufficient cold holding capacity to remain open, in person reinspection will be on Tuesday, August 5th. Corrective Action: Correct prior to re-inspection.

Ready to eat/time temperature control for safety foods should be held for a maximum of 7 days, the prep date + 6 days, to prevent the growth of pathogens. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.
