Observed various baked goods with TCS fillings and toppings including: taro, red bean, custard, hot dogs, and cheese held at room temp overnight that the Person in charge (PIC) stated were on time control. PIC stated the old buns are sold until around 12pm the next day. All TCS foods being held under time as a control from the day before were discarded at time of inspection. See embargo form. 1st consecutive repeat violation. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control.

This establishment received a(n) A Grade and had 0 Priority, 0 Priority Foundation violations on this inspection.Of note: -Observed a propane hodo cake burner in use in the front service counter at the time of inspection. This area is not under a ventilation hood and does not meet the minimum requirements for operation. PIC turned off the burner at the time of inspection. PIC stated they have an electric unit but require a different electrical outlet shape to be installed at the counter wall. Advised PIC to discontinue serving cakes until the outlet can be changed or a plumbed gas connection can be added under the type 1 hood in the back kitchen. Failure to remove/discontinue using propane burners indoors may result in legal action. -Discussed outdoor service with PIC. Advised PIC a mobile food permit or catering permit would be required for service outside of the establishment. OC Inspection conducted with owner Tom C. Establishment was closed and in process of remodeling the front counter area. An expedited remodel permit will be required. ***Current portable pancake station is not approved.Inspection report emailed to Tom C.Correct the following items prior to reinspection:1) Provide a 50-gallon hot water heater with a 100% recovery rate. Current 40-gallon water heater is not approved.2) Provide a drip pan for the water heater and reconnect the T&P drain line to the new hot water heater. 3) Repair the cold water handle on the hand sink and the 3-compartment sink.4) Repair the stem to the faucet of the 3-compartment sink. Water was continuously leaking from the stem.5) Detail clean throughout the establishment (most notably the shelves in the walk-in cooler, condenser fans and ceiling of the walk-in).6) Provide weather striping for the middle of the back door. Observed light shining through the door. 7) Provide a brighter light bulb for the walk-in cooler. Please contact the Department to schedule a follow-up inspection at 602.506.6980 once violations have been corrected. Please be advised that the New Business Permit Application fee includes one initial inspection and one follow-up inspection.
