Observed an in-use ice machine with black, slimy, organic-like material growing behind the deflector panel. Per PIC ice from the machine is used in customer drinks. Educated PIC that ice is considered a food item when used in customer drinks. Instructed PIC in clean-in-place procedure using a hot soapy rinse, hot water rinse, and hot water plus sanitizer rinse. Correct by next routine inspection.

Per PIC the food was cooked then placed inside of the bags on the holding line 2hrs prior to time of inspection. Educated PIC that the use of non-food grade bags (including to-go bags and trash bags) is not approved for storage of open food items to prevent migration of deleterious substances. Inspector's notes

Observed TCS food items with an internal temperature of 51*F registered with an internal probe thermometer. TCS food items included sliced cheese, cooled al pastor meat, and raw chicken. All TCS food items were left inside a drawer prep-unit overnight. Ambient temperature of drawer unit registered at 43*F with a min/max thermometer. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrected at time of inspection.

Salsa verde and salsa chile de arbol with internal temperatures between 74 degrees F and 76 degrees F being stored on a shelf near the three compartment sink. Product is labeled "Keep Refrigerated" and was received on 5/16/2024. PIC discarded the product at time of inspection. Reviewed with PIC that these sauces need to be stored in the cooler at future deliveries. Salsa verde and salsa chile de arbol with internal temperatures between 51 degrees F and 52 degrees F stored in a glass door cooler near the cash register. Ambient temperature of the unit was found to be 49.6 degrees F using a min/max thermometer. Salsas have been in the cooler since last night and were discarded. Recommended to PIC to keep sauces/salsas in an alternate cooler or on ice as long as the internal temperature remains below 41 degrees F. Cooler on cashier line stores bottled beverages. This valve will need to be mounted and you will be required to install a hub drain that needs to be led to the floor sink underneath.3).
