Inspector's notes

Observed TCS food with an internal temperature of 51*F inside a reach-in unit. Internal temperature registered with an internal probe thermometer. Ambient temperature of unit registered 51*F with a min/max thermometer. Per PIC all food items were placed in unit 24hrs prior to time of inspection. TCS food items included; sliced deli meats, blocks of cheese, whole deli hams, dairy products, and whole shelled eggs. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Educated PIC that no TCS food can be placed in unit until the unit is repaired to hold 41*F or less. Corrected at time of inspection.

Observed a deli slicer on the back counter with built up and dried food debris on the back of the slicer. PIC stated that slicer was last used 5 days ago to slice TCS food items. Educated PIC that all food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. Informed PIC that all food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrected at time of inspection.
